Christmas Nut Ball

Ingredients

1/2 lb  butter (salted), at room temp.
2 cups flour
2 cups pecans, chopped
5 tbs. confectioners sugar
2 tsp. pure vanilla extract
1 tbs water
1/2 tsp. salt
Confectioners’ sugar

Baking Directions

Heat oven to 325 degrees F.

Combine butter, flour, pecans, 5 tbs. confectioners sugar, vanilla, water and salt.
Mix (with mixer or by hand if you are really strong.)
Using a slightly rounded tablespoon of dough, form into small 1 inch sized balls.
Bake on ungreased cookie sheet for 20 minutes.
Let cool, on cookie sheet for 2 minutes.
Roll in bowl of confectioners sugar. 
Let cool and Store in cookie tin.

This is a really easy recipe.  My mother and Grandmother bake the best and most wide assortment of Christmas cookies and this is the only reicpe that I can do!!!  I am glad they are my favorite.  They are the most buttery, crunchy, salty, sweet, tasty, treat.  I hope you enjoy.

Food Editor Wendy’s Notes:

I like having a little more confectioners’ sugar on mine. I found that after they cool, if you toss them in the confectioners’ sugar again it gives the cookies a nice second coat.

If you really love the taste of pecans, then before you chop them bake them on a jelly roll pan in a 350 degree F. oven for about 8 minutes, until fragrant and just toasted. Let them cool before chopping and adding to the other ingredients.

Oh YUM!!~~  Thanks, Wendy, and Kaboose~!.  I'm baking these cookies tomorrow morning- (in fact, I just pre-measured everything so they're ready to go - they sound wonderful~~ and I have the day off to do my Christmas baking  (I'll report back on results - hopefully I won't  eat them all myself before passing any around --just kidding).  Wendy:   Congratulations, and Merry Christmas!.  And Merry Christmas to Kaboose and Kaboostieres (is that a word??)  haha  -   Donna from Maine  (v5dmm)

Almond Lace Cookies
Chocolate Topping, optional:
2 to 4 ounces semisweet chocolate, chopped
 
1 3/4 cups sliced  almonds
3 tablespoons all-purpose flour
2 tablespoons orange zest
1/4 teaspoon fine salt
3/4 cup sugar
2 tablespoons heavy cream
2 tablespoons light corn syrup
5 tablespoons unsalted butter
1/2 teaspoon pure vanilla extract
 
Position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper. Pulse the almonds in a food processor until finely chopped, but not pasty. Stir together the nuts, flour, zest and salt in a large bowl.
Put the sugar, cream, corn syrup and butter in a small saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a rolling boil and sugar is completely dissolved. Continue to boil for 1 minute. Remove from heat and stir in the vanilla, then pour mixture into almond mixture and stir just to combine. Set aside until cool.
Scoop rounded teaspoons  of batter and roll into balls. Place on prepared baking sheet, leaving about 3 to 4 inches between each cookie.
Bake 1 pan at a time, until the cookies are thin and an even golden brown color throughout, rotating pans halfway through baking time, about 10 to 11 minutes. Cool on baking sheet for 5 minutes, then transfer to racks to cool. Repeat with remaining batter.
Optional chocolate topping:
Put the chocolate in a medium heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very low simmer; set the bowl over, but not touching, the water. Stir the chocolate occasionally until melted and smooth.
For sandwiches: Drop about 1/2 teaspoon chocolate or vanilla ice cream onto on the flat side of half of the cookies and press together with remaining halves. Return to rack and let chocolate set, or freeze sandwiches with vanilla ice cream wrapped in parchment paper.

Oatmeal Chocolate Caramel Pecan Bars
 
3 cups oats
2 1/4 cups flour
1 1/2 cups brown sugar
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cups melted butter
 
1-14 oz. bag of caramels
1/4 cup of water
 
1 1/2 cups chopped pecans
1 bag of chocolate chips
 
Preheat oven to 350 degrees. Mix first five ingredients then mix in melted butter. Dough may be crumbly. Press 2/3 of mixture into the bottom of a greased 9x13 metal baking pan. Set the rest aside. Bake for 10 minutes, then remove from oven and let cool. In a saucepan, melt the caramels with the water on low heat, stirring constantly. When caramel is completely melted, remove from heat. Sprinkle nuts and chocolate over the cooling (it doesn't have to be completely cool) cookie in the pan, then drizzle the caramel over it. Sprinkle with remaining dough. Cook 15-18 minutes, or until golden. Cool and then cut into squares.

I am so excited that my cookies won!!! I have never really won anything, so this is awesome!!! I hope you all enjoy the cookies as much as my family and Ido!  I really like the idea of toasting the pecans, since I LOVE the taste of pecans. I am baking another batch and going to try that today.  Thank you Wendy.  Thank you to all at Kaboose for picking my cookies!  I can not wait to try the other recipes. too.

Congrats to the winners!  Baking is really an art form.  Yesterday, my son and I made some oatmeal raisin cookies from a recipe in the local newspaper...not sweet enough at all.  I guess recipes are the starting point and then you have to take the time to cater them to your specific tastes.
