We're making our home made apple sauce soon... we simply peel and core our apples, add water and simmer in our pot with spices (cinnamon and maybe a bit of nutmeg, alspice, ginger and maple syrup) until it's mushy.
Use a hand-blender to puree and then you can either eat it fresh... or refrigerate (if you'r eusing it in the next few days) or then can into sterilized jars (do a hot water bath after).
I make applesauce the same way....apples, a little water and cinnamon. If the apples are really tart, I will add a little Splenda. I usually whirl it in the blender to make it smooth to keep my family happy but I like it better chunky.
tdurbala, what part of the country are you in? We also had a bad freeze in April and had minimal crops. I am in Wisconsin.

I have made some very easy in the microwave and then blender.
put some pealed apples in chunks with a little water in the microw. then blend it.
add honey, sugar , cinnamon, and butter if your serving it warm.
for variety try ground nut meg or my favorite, ground cloves too.
Now if you like old fashioned and chunky, in a pot boil with sugar and whole cinnamon sticks
very good too. hey It's making me want to do some:))
